Welcome Santiago, our new Head Chef
We could not be happier to announce that we have a new Head Chef in Santiago Fernandez.
Spanish-born Santiago has spent the past five years as Head Chef at Sault, in Daylesford, Victoria, and comes to Margaret River with a real understanding of utilising seasonal produce and sourcing from local growers.
Prior to his move to Australia, he established his culinary career amongst Michelin-starred restaurants, Tristan in Mallorca, Restaurant Toni Vicente, Santiago de Compostella and Tapies Restaurant, Lleida. His career has taken him from Spain to Germany, Mexico and Russia, working with small teams of four up to catering for 800 guests for the Spanish Kings Cup Sailing Competition.
Santiago is excited by our ‘wine-first’ concept in our degustation Discovery Menu, which tells our story via a wine and food sensory dining experience.
“I would like to create food based in the region – with wine, we talk of terroir, or the place it comes from. I want to create food du terroir. Using produce that is seasonal, ethically sourced, such as sustainable seafood, and organic when possible. Margaret River’s fine wines are renowned across the world and the region also offers plenty of quality produce, which is always a great source of inspiration for chefs and cooks.
“I want to work with the winemakers and Claire (our Sommelier) to match our wines in the best way possible with contemporary cooking style and techniques.”
Santiago has already spent time meeting producers in region with our former Chef de Cusine, Matt Egan, taking him on a regional road trip. Stay tuned for Santiago's new menus, which will be showing his flair from June once he gets himself firmly settled into the kitchen.
Meanwhile, Santiago will be preparing a menu designed around our new Tom Price Chardonnay, the first Chardonnay to be released under this prestigious label. The June 24 dinner will also give diners a preview of the 2012 Tom Price Cabernet Sauvignon before its official release in August. For further information and bookings, click here.
