Winemaker notes
Warm conditions during the ripening season produced a wonderful 2007 Girt by Sea Cabernet Merlot that will thrill consumers the moment they try it. This wine has lovely, juicy, dark fruits, is full–flavoured, generous and yet has beautiful, soft, sweet tannins. Blood plums, dark cherries and blackberries are the dominant fruit flavours. Oak maturation has given the wine a degree of complexity and added subtle vanillan characters. The wine was bottle–matured for twelve months prior to its release bringing benefit to the naturally soft tannins. The wine can be consumed today or cellared for up to five years. Nice earthy complexities and further softening will develop over the next few years.
